2 cups plain Greek yogurt
2 cucumbers, peeled, seeded and diced
2 tablespoons fresh lemon juice
2 garlic cloves, finely minced
2 tablespoons finely chopped fresh dill
Salt and pepper, to taste


  1. Place cucumber in a colander and sprinkle with salt. Let the cucumber to sit for 30 minutes, allowing liquid to drain. Wipe clean with a clean cloth or paper towel.
  2. Mix together the yogurt, lemon juice, garlic and dill. Add cucumbers and mix well.Chill for at least two hours.

NOTE: Greek yogurt is ideal because it has been drained. You can use any plain yogurt. If you want the thick texture of Greek yogurt just place the yogurt in a fine mesh strainer for a few hours to let the liquid drain out and make a thicker yogurt.
