Kookoolan Farms will be back on July 23. In addition to fresh chicken and fresh eggs, they’ll have fresh quail and frozen rabbits, and are taking
orders for custom-processed, grass-fed beef and for Thanksgiving Red Bourbon heritage turkeys!
Recipe: Quick Summer Chicken
2 Tbsp butter (Jacobs Creamery!)
2 tsp nut oil
1 whole raw chicken, cut into strips or diced (Kookoolan Farms!)
½ cup fresh chopped tarragon leaves, tops reserved for garnish
Crème fraiche, to taste (Jacobs Creamery!)
Lemon juice, to taste
Salt and freshly ground black pepper, to taste
In your largest skillet on med-high, heat the butter and oil together until sizzling but not brown, add the chopped tarragon and chicken pieces
immediately and cook for 3 to 4 minutes until the chicken is sticky and a nice caramel colour; the butter will have browned by now, but that is fine
as long as it does not burn. Turn the chicken over and cook another 1 to 2 minutes. NOTE: depending upon the relative sizes of your skillet and your
chicken, you may need to do this in two batches.
Add a large spoon of crème fraiche – I use about 2 tablespoons, but you can add more later. Allow to bubble for about 2 minutes and then add some lemon
juice to taste. Season with salt and pepper and adjust the consistency if you want it creamier.
Serve with fresh tarragon leaves scattered over the top and a side salad with French dressing. Bon appétit!
Note: this recipe works great as a hot entrée upon cooking, and the next day as a chilled chicken salad, especially if you stir in some chopped
celery, green scallions, and chopped nuts, along with a little more crème fraiche!

Kookoolan Farms is a diversified micro-eco-farm with a petting-zoo environment in the center of the Yamhill-Carlton American Viticultural Area. We have pasture-raised heritage chickens for meat and eggs; pasture-raised beef and lamb; heirloom Red Bourbon turkeys for Thanksgiving only; occasional other gamebirds such as pheasants, ducks and geese; mixed heirloom fruits and berries orchard; five-family CSA vegetable garden; a few Jersey dairy cows; complete line of cheesemaking books, supplies, ingredients and equipment; and hands-on cheesemaking classes two Saturdays a month. We expect to have licensed our small craft meadery by December 1, 2009! Our on-farm, self-service farmstore is open daily; please call to make an appointment for your first visit.
