The nursery  folks are returning to the market now. They don't have tomatoes but are  bringing a good selection of plants that can be put in the ground.  Garden Color is back with hellebores, blueberry plants and other  perennials. Gales Meadow Farm returns in March with vegetable starts.  Graceful Blades has elderberry bushes as well as the citrus. As the days  get longer and warmer, you'll see more plants at the market. <h3>Cooking Ideas - Leek Salad</h3>
<p>Leeks don't look like an obvious candidate for a salad but the leek's mild onion flavor works really well with a mustardy vinaigrette.<br /> <br /> <span style="text-decoration: underline;">Leek Salad</span><br /> <br /> <em>Ingredients</em><br /> 8 medium leeks<br /> 1/4 cup white wine vinegar<br /> 1/2 cup olive oil<br /> 2 T dijon mustard<br /> salt and pepper<br /> 1 hard boiled egg<br /> <br /> <em>Steps</em></p>
<ol>
<li> Trim the tops and the root off the leeks and quarter lengthwise. Slice the quarters into several strips lengthwise leaving about 1/2 inch at the base. Rinse and soak the leeks in cold water to remove the grit. Remove the leeks from the water and tie into bundles. Cook the leeks gently in chicken stock until just tender. Remove from leeks from the pot, drain, untie strings and cut into two inch lengths.</li>
<li> If you don't have chicken stock on hand, cook some diced potatoes and then use the potato water as the stock for cooking the leeks. Add the warm potato to the salad.</li>

<h3>Cooking Ideas - Roasted Rutabaga with Paprika &amp; Poppy Seeds</h3>
<p><em>Chef Kathryn Yeomans The Farmer's Feast <a href="http://thefarmersfeast.wordpress.com/" target="_blank">http://thefarmersfeast.wordpress.com</a></em><br /> <br /> In Friuli, a region of northern Italy whose cuisine is flavored with Slavic influences, this dish is made with turnips. I can&rsquo;t see any reason a fine rutabaga couldn&rsquo;t be used in place of turnips. Rutabagas tend to be sweeter, denser, and creamier than turnips, which I think would only enhance the preparation.<br /> <br /> At home, l am inclined, most often to peel and cube a rutabaga, toss the cubes with salt and olive oil, and simply roast them (on their own, or in combination with other root vegetables) in a hot oven 450&deg; F) until tender (about 20 minutes or so, depending on the size of the pieces of rutabaga). This recipe is a nice alternative &mdash; perhaps with a beef stew, roast chicken, or seared pork chop...or alongside saut&eacute;ed kale &amp; mashed winter squash.<br /> <br /> <span style="text-decoration: underline;">Roasted Rutabaga with Paprika &amp; Poppy Seeds</span><br /> <em> Recipe adapted from Molto Italiano by Mario Batali</em><br /> <br /> 4 Tbsp. unsalted butter or olive oil<br /> 2 pounds turnips or rutabaga, peeled and cut into 1-inch cubes<br /> salt &amp; freshly ground black pepper<br /> 1-2 Tbsp. poppy seeds<br /> 1 Tbsp. paprika (smoked or sweet)<br /> &frac14;&nbsp; cup red wine vinegar<br /> <br /> <br /></p>

<li> ln a 10 to 12 inch saute pan, heat the butter over medium-high heat until it melts &amp; begins to brown. Add the rutabaga, season with salt &amp; pepper, and toss well to coat. Saute until the rutabaga cubes are golden brown. Add the poppy seeds 81 continue to cook for several more minutes, reducing the heat if the rutabaga threatens to brown too quickly (total time, about minutes &mdash; the rutabaga should be tender but not mushy)</li>
<li> Stir the paprika into the rutabaga cubes. Add the vinegar. Bring to a boil and cook until the vinegar has evaporated. Check the seasonings and serve hot.</li>

Chuck and Rachel Stephens of Stephens Farm in Grand Island have been staying with family in Salem but made it to the market too. Given the wind and rain, the market was pretty lively. Thank you all who came out.</p>
<p>I spoke with John Eveland at Gathering Together Farm on Saturday. He is hopeful that the farm will be back in the market in a few weeks. Greens will be very limited but there are plenty of storage crops. I'll be checking in with Deep Roots this week to see how they fared.</p>

In a conversation over lunch, Linda Colwell reminded us that La Jota of Trieste is also a variation on this rustic soup, using sauerkraut instead of kale, and fragrant with cumin. Our friend and former neighbor, China Tresemer, helped us put together this recipe.<br /> <a> </a><br /> The recipe calls for unsmoked but cured pork: guanciale or pancetta, but in a pinch, a piece of salt pork will do. You can make this dish without the meat as well. Likewise, savoy cabbage, rocket or escarole can be used for the greens. For beans, we use Borlotto Lamon which has a deep nutty flavor and pleasant sweetness. The water the bean cooks in yields a delicious broth. There are several reasons why this variety is not more available commercially: Pole beans cost more to grow. The Lamon must be handpicked and has just three or four beans per pod compared to the usual five to seven. It also ripens late, splits in the rain, and is prone to viruses. Mere details, other than that it is perfect, the most glorious of the cranberry beans.<br /> <a> </a></p>

<p>3 cups (525g) Borlotto Lamon dry beans<br /> Water<br /> 4 ounces (100g) unsmoked but cured pork, minced<br /> 2 tablespoons extra virgin olive oil<br /> 1 carrot, minced<br /> 1 onion, minced<br /> 1 stalk celery, minced<br /> 2 cloves garlic, minced<br /> 3 sage leaves, fresh or dried, minced<br /> 1 cup canned crushed tomatoes, preferably your own<br /> Salt and pepper<br /> 8 stalks of kale, collards, or lacinato kale, rib removed, minced<br /> 1 1/2 cups (210 g) medium-coarse flint cornmeal<br /> good olive oil</p>
<p><span style="text-decoration: underline;">Steps</span></p>
<ol>
<li> Soak the dry beans in plenty of water overnight. Drain the beans, add fresh water to cover the beans by about 2 inches (5 cm), bring to a boil, then turn down the heat, and simmer until tender, 40 to 90 minutes.</li>
<li> In a soup pot, saut&eacute; the pork in the olive oil until it begins to turn golden. Add the minced carrot, onion, and celery, and saut&eacute; gently until the vegetables are soft. Add the garlic and the minced sage leaves. Add the tomatoes. Cook until the mixture thickens a bit, about 12 minutes. Add salt to taste. Chop the kale leaves and add to the pot. Add the beans and their liquor, topping the soup off with more water to create a good broth. Season with salt to taste.</li>
<li> Bring the soup to a gentle simmer. While the soup is simmering, trickle in the cornmeal, and stir occasionally until the polenta is tender, about 40 minutes. Season to taste with salt.</li>
<li> Serve the thick soup in shallow bowls with a good ribbon of the olive oil on top.</li>

As for fruit, apples, pears and kiwi will be available. Greens are versatile. You can use them as a side, in soups or in salads. Here's a simple frittata recipe. The prep work doesn't take that long and you'll have plenty of time to finish making dinner while the frittata is in the oven. While I used kale in the recipe, chard or escarole work well too.</p>
