Salsa Verde
1 pound tomatillos, husked, rinsed and chopped
1/2 onion, minced
1 clove garlic, minced
1 teaspoon stemmed, seeded and minced habanero, jalapeno or Thai chile, or to taste
4 tablespoons chopped cilantro
2 tablespoons lime juice or cider vinegar
Salt and freshly ground pepper to taste.
Combine all ingredients in a bowl; taste and adjust seasoning as necessary. Let flavors develop for at an hour.
Variations:
Add some colors with chopped yellow peppers or a chopped yellow tomato.
